Asparagus Chorizo Hash

Mmm-mm, this was so good! 
Hit-the-spot good. 
Making-me-crave-it-for-dinner-again-tonight good. 
My mind is truly everywhere else right now, so I don't know what else I can say to make you want to cook this. It's just damn good!

Adapted/Inspired by Smitten Kitchen

Serves 2 

small splash of oil
about 4 medium sized potatoes
2 chorizo sausages
1 large shallot
small bundle of asparagus (maybe 5 spears?)
salt
fried or poached egg (optional)


Heat oil in cast iron pan over medium heat. Dice potatoes into fairly small cubes (1/4") and slice sausages into small pieces. Toss into pan let cook covered for about 10-15 minutes stirring occasionally. Mince shallot and add to pan. Remove lid and continue to let cook until sausages begin to brown and potatoes are soft. Chop asparagus into bite size pieces and add to pan. Season with salt and let cook until asparagus is bright green and just becoming tender.
If you'd like to serve it with an egg on top (highly recommended!) I would begin working on this before you add the asparagus.Pin It
